Healthy Choices: Cucumber Relish

Hope you all had a wonderful summer break and are getting back into the swing of things. I have returned from my R&R in sunny Bali (Indonesia) and can I say what a great holiday. The culture, scenery and yes the food! On every plate without a doubt cucumber relish (Ajat) will accompany the meal. With that in mind I loved the side dish so much that I wanted to share the recipe. Very” bagus” !

Ingredients:

  • 1 Tsp raw or brown sugar (Stevia or Xylitol can be used)
  • 1/2 cup water
  • 1/4 cup white vinegar
  • Pinch salt
  • 2 long red chillies seeded and and finely diced
  • 1 small red onion finely diced
  • 1/2 Lebanese cucumber, seeded and finely diced
  • 1 TBS chopped coriander (optional)

Method:

  1. Combine the stevia with the water, vinegar and salt into a pot and place on stove.
  2. Bring to the boil and once stevia has dissolved remove from the heat.
  3. Cool and then add remaining ingredients into sauce and stir.
  4. Place the Ajat in a ramekin and serve as an accompaniment.
